SAFAS Introduction to Food Safety

All personnel who have access to food preparation areas and the kitchens need to be trained to a minimum ‘awareness’ level.  This is to ensure that they understand and implement basic personal hygiene, elements of contamination prevention, cleaning procedures, disposal of refuse etc. 

This is a short course, approx 2 hours with a multi-choice test at the end.  

  •  A SAFAS Certificate of Attendance will be awarded to candidates.

A very cost-effective way to run your own training for waiters, bar staff, kitchen porters/assistants, drivers, packers etc.  ‘Introduction to Food Safety’ provides the essentials of Food Safety Awareness  in a simple but powerful, self-learn program which you can run on your own PC in-house. Staff can go through the course at their own pace and then complete   a multi-choice exam at the end; the program allows a SAFAS certificate  to be printed off by successful candidates.

 


CIEH Level 2 Awards in Food Safety in Catering  

This course is designed for all food handlers and is designed to provide the fundamentals of good food hygiene practice. This is a one day course, with a multiple choice exam at the end.

  •  Temperature control
  •  Refrigeration, chilling and cold holding
  •  Cooking, hot holding and reheating
  •  Food handling
  •  Principles of safe food storage
  •  Cleaning
  •  Food premises and equipment
  •  A CIEH Certificate will be awarded to successful candidates.


Level 3 Award in Supervising Food Safety in Catering

This course is designed for Head Chefs and managerial staff. This is a 3 day course with a multiple choice exam at the end.

  •  Bacteriology
  •  Food Poisoning and Food-Borne Disease
  •  Physical Contamination of Food and its Prevention
  •  Food Storage and Temperature Control
  •  Food Preservation
  •  Design and Construction of Food Premises and Equipment
  •  Cleaning and Disinfecting
  •  Pest Control
  •  Personal Hygiene
  •  Legislation
  •  Supervisory Management
  •  A CIEH Certificate will be awarded to successful candidates.


CIEH Advanced Food Safety Certificate  

This course is designed for Production Managers, Trainers, Owners or Managers of food businesses, Supervisors with intermediate food safety knowledge, Hygiene Personnel and Hygiene Auditors. This is a 5 day course with an exam at the end.

CIEH Level 2 Award in Healthier Food and Special Diets – a new course!

Subjects covered:

 

  •  The relationship between nutrition, diet and health
  •  The nutritional requirements of different population groups
  •  Current policy, legislation and voluntary guidelines
  •  The effects of food processing on nutrient content
  •  Nutrition labelling

SAFAS Nutrition and Food Allergens Awareness course (half day)

This is a shorter version of the CIEH course mentioned above, giving candidates an awareness level of Nutrition.

This new course:

  •  Describes the foods which are the main cause of food allergies

  •  Describes the side effects of these allergies

  •  Suggests alternative foods which don’t cause harm

  •  Advises on giving information on food content within your menus
